1. A sauce-usually cold-used to coat or top salads and some cold vegetable, fish and meat dishes. 2. A mixture used to stuff poultry, fish, meat and some vegetables. It can be cooked separately or in the food in which it is stuffed. Dressings (also called stuffings) are usually well seasoned and based on breadcrumbs or cubes-though rice, potatoes and other foods are also used.

Material applied to an injured body-part to protect it and assist healing. The material may also act as a means of carrying or enclosing medicines.

1. any of various materials used for covering and protecting a wound. A pressure dressing is used for maintaining constant pressure, as in the control of bleeding. A protective dressing is applied to shield a part from injury or from septic infection.

  • dry d. — support and pressure bandages not applied to moist wounds.
  • occlusive d. — plastic film placed over medication that has been applied to the skin enhances absorption by trapping moisture, raising skin temperature and concentrating the medication.

  • wet d. — soaking of a bulky dressing to aid in cleansing, drainage and débridement of a wound. May be applied intermittently or continuously.
