1000 watts will definitely be hotter and produce more lumens but alot of light is lost by distance or the proximity of the light to your plant. All I've seen posted would suggest using more smaller light fixtures (i.e 400 watt) closer to plants unless you are trying to cover larger areas at once and are not concerned with the loss of useful light spectrums through distance.( 1000 watts produces lots of heat so it needs to be some distance from the plant even with a cooling system.)
As far as growing faster that would depend on what type of bulb you are using and when you are employing that bulb.
