Jewish tradition permits kosher steak. To be kosher, a steak must come from a healthy animal that was slaughtered according to the rules of Kosher slaughter. That was the easy part of the answer. The hard part is that kosher preparation of meat from the hindquarters of animals is expensive because the sciatic nerve must be excised (see Genesis 32:25-33). Excising this nerve is expensive, so most kosher slaughterhouses don't bother, they just sell the steaks that involve this nerve on the non-kosher marketplace.
