Because the founders recognized the natural right to weigh the consequences of individual action beforehand. Ex post facto laws, remove that right from the individual, as no one would be able to say for certain what the law would be tomorrow.

Retrospective laws are unfair because they change the legal status of the past. So if you do something that is not illegal on Monday, and the government decides to make it illegal on Tuesday, you can be punished legally.
