Yes. I've seen sangria recipes with every liquor known to man, every wine known to man, every fruit known to man, and every sweetener known to man. Basically, use what you already like to make Sangria.

Yes. You could argue it's even more authentic to its Spanish roots, although since sangria is not a particularly authentic drink you should feel free to experiment. Note that sherry is less alcoholic than brandy, so you may wish to use more.
