I'm answering my own question... What I've found is that you CAN connect an Xbox 360 to an Ubuntu computer. Well, as typical, you need an Ethernet port. I'm going to tell you how to share the Internet connection (assuming that you have at least either two network cards with Ethernet ports or one wireless card and one Ethernet). Since I use Ubuntu 10.04, I'm going to explain how to perform this with a GUI interface via the Network Manager.
1. Make sure power to router and 360 is on and all connections secure (duh)
2. On the Xbox, go ahead and bring up the connection test window (it'll save some time)
3. On your Ubuntu PC (desktop or laptop), go to "System" on your top bar, then navigate to "Preferences, then select "Network Connections"
4. Find the Ethernet port that is connecting to the same router that your 360 is connected to (if you are using wireless, it will be listed as "Auto eth0") select it, and click "Edit"
5. A new window will open. Navigate to the tab labeled "IPv4 Settings", and change the Method to "Shared to Other Computers", then click "apply"
6. Restart your computer (log in, etc)
7. One your computer has restarted and reconnected to the Internet, on your 360 select "Test Connection" More than likely, it will not connect due to a DNS server error (at least, that is what happened to me)
8. If you receive a DNS server error, on your computer, right click on your connection icon (signal waves if using wireless, opposite arrows if using wired) and select "Connection Information"
9. Keep the screen up as you will need the DNS number, and, on your 360, select "Configure Network", then "Manual"
10. Select "DNS Server" which should be, more than likely, "0.0.0.0" and enter your computer's DNS.
11. Enter the DNS listed on your computer into the 360 (don't forget the dots)
12. Test your 360's connection and it should connect to Live.
