The concern when taking warfarin (coumadin) is the amount of vitamin K ingested. Vitamin K can reduce the anti-clotting action.

Generally, the highest amounts of vitamin K are found in green leafy vegetables. There is a moderate amount in V8, and even less in Tomato Juice. Beets and their greens differ substantially in their vitamin K content; a single one cup serving of cooked beet greens contains nearly 700 micrograms of vitamin K while a serving of cooked root contains only 0.170 micrograms of vitamin K and is not considered a significant source of vitamin K.

Vitamin K can interfere with Coumadin's (warfarin) action in the liver, resulting in an increased risk of blood clots.
