If you freeze fresh fruit it tends to completely lose its shape when it is defrosted. This happens because the cells are broken when the water in them expands as it freezes. You can freeze fruit puree, fruit juice or foods with fresh fruit in them, but the fruit will not retain its texture. It also loses flavour the longer it is stored. Some berries can be frozen but special techniques are used; it's worth buying the pre packaged ones because you'll waste a lot of berries trying to work out how to do it.

Yes, but not the whole melon. The seeds and rind need to be removed and the flesh cut into pieces. Package it in freezer containers, cover with a 30% syrup (leave headspace) then freeze. Using syrup is the preferred method, but you can freeze without it.

A 30% syrup is 4 cups water plus 1.75 cups sugar.
