I remember Quiche Lorraine (invented long before 1600) becoming very popular suddenly around the mid 1970s, and just about anything you could put zucchini into. One particular horror I found was shredded zucchini in brownies (not magic brownies, nor greenies) but the actual recipe called for a cup of shredded zucchini to replace some of the egg and butter.
Blanch the zucchini (immerse in boiling water for 3 minutes then remove and plunge into a bowl of ice water until cool), after removing from the ice water transfer zucchini to a colander to drain. Pack loosely in freezer bags, lay flat in freezer, and freeze.
