Actually you can. Colonial hunters often made "hippo bacon" while they were out hunting other game. Hippo meat was a prized delicacy throughout much of southern Africa. Read up on safaris in the 1920s (or earlier) and you'll probably find reference to hippo bacon.

A groundhog is a rodent of the family Sciuridae. It is not a pig and therefore, you can't get bacon from a rodent!
