Peeling them is a lot of work, so just do what normal people and professional chefs do. Buy canned ones. Preferably Italian ones of the "San Marzano" variety.

They remove the skins because its the inside of the tomato that makes you able to mix it with other food ofr mixtures like kung-po ect.
