Pretty well any scraps except meat. But since chickens need their nutrition too, you should not rely on scraps as a main food source for your chickens. They need feed with the proper nutrients, so you're better off to feed that to them and feed them scraps as a treat.

Most anything that comes out of your kitchen can be given to the hens as a treat. Some foods like potato skins must be boiled prior to being given to the hens as they contain a substance called solanine which is an alkaloid and bad for the hen. Rhubarb, tomato leaves are of the same plant family and should be avoided.

Most everything else can be fed raw to the hens.

Most veggie peels can be presented raw saving the nutritional content. Potato peel must be boiled to reduce solanine which is a natural alkaloid and poisonous to animals.
