Some dishes are better suited for a certain type of bakeware, so it is good to know the different properties of tempered glass bakeware and metal bakeware.

  • Tempered glass bakeware -- Glass absorbs heat well. This means that, when you put a glass bake dish in the oven, it will take more time for the glass to reach oven temperature. Likewise, when you take the glass bake dish out of the oven, it will retain its temperature and cool down very slowly. Even after you take it out, the glass will continue to "bake" the dish for a while as it cools. This makes glass bakeware ideal for casseroles. Make sure your glass bakeware says "tempered" which means it's oven safe, tested to withstand high temperatures over 500 degrees.
  • Metal bakeware -- Metal is a heat conductor. This means heat passes almost directly through it as if it was not there at all. When you remove the dish, the rim of the metal bakeware will be cool enough to touch after only a few minutes. The benefits are that they are light weight, easy to clean and they wont break if dropped. They're best used for simple bread dishes, cookies, brownies and most cakes. Note that metal bakeware dishes need to be watched more closely since burning the dish is more prevalent.

You would use a different temperature for glass and metal baking when it comes to cakes muffins etc.
