According to data from McCance & Widdowson's The Composition of Foods (6th Summary edition), there is approximately 0.7-0.8g protein per 100g lettuce. According to the data in the book, this is an average taken over five types of lettuce. In terms of reliability, McCance & Widdowsons is the UK Food Standards Agency's formal reference guide for nutritional data and is a standard reference source for the food industry here. Yes. One leaf (iceberg)=0.14g; one cup (shredded, iceberg)=0.65g. Not a good source of protein.
