there are many different kinds of weedkillers, in the bottom line most of them damage the plants ability to protect it self from free radicals or the sun which will then kill it but this is by no means a comprehencive answer.

Atrazine (AAtrex is one brand name), for example, blocks photosynthesis. Other herbicides inhibit lipid or amino acid synthesis, others throw off the weed's growth process (growth regulators), and still others act as pigment inhibitors or seedling root / shoot growth inhibitors. There are plenty of modes of action from which to choose.

Some weed-killers are designed to work "only" against some plants or family of plants.

Other weed-killers are just general killers and kill all plants. This including trees.

If you are uncertain about the weed-killer you have then you should take great care not to apply this near any trees you want to survive. This not only true to Apple trees.

Dosage might be of interest. A tiny firecracker won't do much damage to a garden where as a nuclear bomb will flatten the city..

It is a good idea to do some research on your poison if ever unsure about its abilities.

Different types of weed killers contain different chemicals. It would depend on the type purchased what it has in it. Many have a list of ingredients listed on the bottle or website.
