During a Q&A session on a Good Eats DVD, Alton Brown explained that television time is so expensive that if food preparation takes more than two minutes, then the food will be prepared in advance. This means that the steak thrown up on the grill for seven minutes might not be the same steak taken off the grill, and it most certainly won't be prepared by the host, since the shows have chefs who work in the background, preparing the food so it'll be ready when needed.
The shows are real in the sense that the food is actual food that has been cooked, but they are fake in that they're television shows and everything on television is scripted, staged, and edited for the best presentation.
Jamie Oliver originally styled himself as The Naked Chef because he believed in a cuisine of "real" food that wasn't covered in sauces and flavors beyond the natural flavor of the naked food.

A script for a talk show would list the host's name and the questions they are to ask. It would also mark the spots when the host should break for a commercial, or pause to allow the guest to speak.

Italian cooking shows??? It is best to travel to Italy if you want the best. Go to pizzerie, ristoranti, or just any home in the south of Italy. That is the best. Otherwise, the common shows on tv - rachel ray, and the other whiz bang chef (can't think of his name), but they have some good starter ideas. By far, Italy is the best of all.
