Ans2: Hmm, a room temperature roux...that would take all the fun out of Cajun Napalm.

Your roux will start bubbling as the temperature hits 212° F and all the water boils out of your flour...actually, you should have already had the oil up to about 350° F before you stir in the flour. Keep stirring, the roux will go from mud brown to brick red. Stir, Stir, Stir! If you go past brick red, the roux is burnt and you need to dump it and re-start.

Be ready to quench the roux as soon as you see any red. Kill the heat and dump in the vegetables.

3 degrees? Sounds sort of goofy to me...

  1. Take the oil to around 350° F;
  2. Stir in the flour;
  3. Quench at Brick Red.

The “fancy” designation, which you’ve probably seen on Hunt's bottles or McDonald's ketchup packets over the years, actually used to be the USDA’s highest rating for ketchup. It has (somewhat mysteriously) fallen out of use recently, though; its current equivalent is U.S. Grade A ketchup.

Ketchup can get an A, B, or C grade. To get an A, ketchup has to be at least 33 percent solid and have good color, consistency, flavor, and finish, as well as earn at least 85 points on the USDA’s 100-point scoring system.

The USDA still uses “fancy” to describe the quality of some other foods (apples can even be extra fancy), but by today’s standards, “fancy ketchup” is as meaningless as it sounds.

I just called the Ocean Spray 800 number... 800 662 3263... and spoke to a live person !! Ocean Spray Cran-Orange has been DISCONTINUED !!! The woman on the other end said she would pass my comments on to management. So I suggest that if, like me, you are disappointed... then call the number and let them know. Maybe we can get a movement started.

Same problem here. I went to our local major stores (Giant, Safeway and another.) NONE HAD IT! So I was hoping what u said wasn't so: It's been discontinued.

If you wish to eat a hot dog, you could take off the bun, which does have calories. Buns also are bread, which, have calories and carbs. Carbs aren't good for you either, and are harder to loose by doing workouts. Mustard isn't the best either. And pickles, they are pretty good as they are healthy vegetables, which are good for your body in my different and exciting ways. Also, if you were to eat a hot dog, maybe you could try a hot dog with pork, turkey, etc. instead of the normal just plain pig. It is actually more tasty with other meats it in, and there would be less fat.

Ketchup has a long shelf life. It lasts up to 2 years unopened and a year opened and refrigerated. It has a lot of vinegar in that preserves it. But mold can grow on the lid. If the bottle looks bloated or makes a popping sound when opened, throw the bottle away.

It can vary from one substance to another and some agencies governing food regulations require different temperatures. For milk, you bring it to 161F for 15-20 seconds in the US. It's different over seas. I don't know what the temperature is for syrup.

Since most syrup is made by boiling the juice from a plant or the sap from a tree, it shouldn't need to be further pasteurized since it's been boiled for a good long time.

No, not in the actual condiment. The two versions are merely alternate Westernized spellings of the original fish-based Chinese sauce that ketchup hails from. This proto-ketchup became popular among Western traders in the late 17th century.

As it gained traction in Europe, the sauce went through many incarnations (including a walnut-based version) before settling on the tomato goop we know and love. That’s why it says “tomato ketchup” on some bottles—it seems redundant today, but that’s only because no one goes around asking for walnut ketchup anymore.

“Ketchup” is the more popular spelling, and it became so in the mid to late 20th century. Heinz was an early “ketchup” adopter, and other big brands switched over as it gained more market share. But either spelling is technically acceptable—for example, the USDA exclusively uses “catsup.”
