What kind of gravy is it? If a Beef based Gravy you might could add some more salt depending on how sodium consious you are. I have also been known to try Black Coffee

if the Coffee makes the gravy too thin then take some Corn Starch (About 2 tsp and mix it with some Cold water add to the gravy and bring to a boil and this will thicken it if not thick enough then add more cornstarch a little at a time just like you first did until desired thickness, this should also going to steadily be decreasing the sweetness also. Bringing the gravy up to a boil is what makes the Cornstarch Mixture thicken so be patient if it doesnt thicken as soon as you put it in. You can use Flour to thicken but you have to be carefull or it will make your Gravy Lumpy. I can do it but I watched my Grndmother for years so I feel comfortable with it. I feel like I told you more about thickening than I did how to get the sweetness down...LOL

One raw potato, whole, and peeled. Cook it in and remove before serving. The raw potato, peeled and thickly sliced (more surface area) and cooked in helps. (Remove before serving.) Other than that, it's about hiding or diluting the salt. It's kinda hard to hide salt in gravey, but it can be diluted. Adding water (stock would be better, if it can be had) and a thickening agent will help. You can also squeeze some fresh lemon juice, this will cut down on the saltiness and give your gravy lighter taste and aroma.

If your gravy is too salty, peel a potato, cut into slices or chunks and add to gravy. The raw potato will soak up much of the salt. Leave potato slices in for 5 - 10 minutes, then taste. Once you remove the potatoes then taste again and you may have to add a little more water because potatoes can make the gravy thicker. If you are boiling vegetables such as carrots, peas, etc., use a little of the vegetable water (it has flavor.) Believe it or not, when your gravy doesn't quite have that kick, use a teaspoon or two of ketchup!

Try adding vinegar a spoonful at a time. This should cut the sweetness. You may also want to try hot sauce or cayenne, but if you don't like your chili too spicy stick with the vinegar.

It can not get sweet unless you put something unusual (like sugar) in it. I would fling it and start again.
