The original moral code, valid for all time, was given on Sinai to the Jewish people who had just been liberated from Egypt by the Lord, this was the Ten Commandments. Subsequent to that, the Pharisees had developed "hedge" commandments contained in the Talmud. If you kept all the "hedge" commandments it kept you far away from even thinking about breaking one of the Ten Commandments. Our Blessed Lord came and did two things, 1) he chastised the Pharisees for all their ridiculous rules (straining gnats, while swallowing camels - Matthew 23:24 - gnats were about the smallest of the unclean animals, camels the largest), while ignoring the underlying principles behind the Commandments. 2) He actually strengthened the Ten Commandments, primarily in the Sermon on the Mount (St. Matthew's Gospel, chapters 5-7) "You have heard that it was said to the men of old, 'You shall not kill; and whoever kills shall be liable to judgment.' But I say to you that every one who is angry with his brother shall be liable to judgment; whoever insults his brother shall be liable to the council, and whoever says, 'You fool!' shall be liable to the hell of fire." (Matthew 5:21-22) In addition, he does away with the cleanness laws and expands the concept of brother to include all our fellow men. The laws which He did away with were the ceremonial laws which only existed to foreshadow the Messiah; as He was here, He has fulfilled all of them, and they are not only no longer necessary, but it is actually a sin to observe them as you would be saying that you are still waiting for the Messiah, thus you don't believe that Our Blessed Lord was the Messiah. Thus Our Blessed Lord challenged the people to see the underlying principles behind the commandments and to live according to those, and to see God in every other person around us (our neighbor) - the Jews tried to limit "neighbor" to their fellow Jews.

No Jesus did not convert. The Old Testament tells us of a new covenant that God was giving to the Jewish people in "time to come". When Jesus (the Son of God) came to earth in human form that "time had come" Jesus simply instituted the new covenant.
