Wild species of beans, maize (corn) and squash were first domesticated by Olmecs and Mayans some 6000 years ago, not on central Mexico but on the southeastern lowlands around the Gulf of Mexico, including the Yucatan Peninsula. Some 4500 years ago the practice spread to the rest of the Americas, and several civilizations, such as the Aztecs, continued with the tradition.
People didn't have to move around nearly as much. They could simply grow their crops in one area, have livestock to raise and "harvest" in one area, and have other people to come up with other ideas for building a permanent residence or city for more people to stay. People no longer had to be nomads, nor hunt or gather food as they moved from place to place.
