By comparing evidence from different sources. It appears that the fossil records of large dinosaurs come to an abrupt end at a certain identifiable point in pre-history. Separate trails of evidence demonstrate massive world-wide deposits of volcanic ash around the same time. It's not as if we have news footage of the events, but we are always accumulating and analyzing data as it is uncovered.
