Either they produce toxins when they grow in food and if this food is ingested you vomit because of the toxin. Some toxins are heat stable and stay in the food even if it is cooked.
If there are bacterial spores in the food they can survive cooking and then "hatch" when in you intestines and then produce toxins while they grow. This causes diarrea.
if raw meats aren't cooked properly some bacteria still remains on them therefore its eaten and goes through the digestive system. Also its best to keep raw meats away from other foods to prevent cross-contamination and keep the bacteria off them.
