Dawn makes a product called Power Off. It works great. If you want a solution using products from around the house, I would try soaking in a solution of hot water, dish soap and vinegar. The soap should loosen the grease and the vinegar helps to dissolve it. You may want to use around 1 cup vinegar per gallon of water for heavily baked on grease.
Removing grease from restaurant equipment can be quite a challenge! The best approach is to clean daily to avoid build up. Depending on the surface, you can use steel wool and a degreasing cleanser to scrub away the grease. Griddles and hood vents should be cleaned regularly to avoid grease fires. It is easiest to clean in the evening when your equipment is still warm.

I don't know but don't try Dawn liquid dish soap. I notice any dish liquid soap makes too many suds in the dishwasher, they come foaming out like an episode of "I Love Lucy" or something. You might be tempted because of it's degreasing action, thus the warning.
Vinegar comes to mind because I think I've seen it on the manufacturer's cleaning instructions, but I don't know if it will cut grease, it's worth a shot and should be safe.
More grease might work too. Like dissolves like, so if you are willing to reach into your dishwasher (off and unplugged or otherwise disabled of course) try rubbing the greasy areas with olive oil which should dissolve it and adding some salt might make it a little scrubby if it needs that too. I'd probably finish with some vinegar on a rag or lemon juice or just running the wash immediately if possible with dishwasher detergent.
Finally check online with the manufacturers website or directions if that's an option but maybe that was not an option and that's why you're on here.
Grease and oil stains are one of the toughest to remove. It's best to wash it off immediately and not let it soak over the day. You should first dab the oil stain for a few minutes with a damp paper towel. Thereafter, you should use a good quality stain remover.
