This is a pretty vague question, but then again, "folk" is a pretty vague term for music. American Folk Music can be defined as any acoustic music that is, typically, sung by the songwriter. How's THAT for vague? By this definition, then, folk music can be the music of Bob Dylan and Joan Baez or the music of Bruce Springsteen and Sheryl Crow or even John Mayer and Train.
"Style" can be anything from sparse fingerpicking on a classical guitar to a full band. Essentially, it is the music of "folks." By this, we mean that it deals with common topics, the common man/woman. Although hardcore folkies tend to deny that country music is folk music, the two are remarkably similar in terms of songwriting subjects. However, the musical "style" in which they are presented is quite different.

European American and Australian folk songs vary in style basically because music comes from the heart and spirit and imagination, and to each his own; it's the way it is! A lifetime of people engaged in music is variable just like the experiments of Ma'am Patalbo. Hence the variety of music in these respective areas.
