There are several different ways that I've seen contestants on that show, and other Cooking Shows make risotto so quickly and easily.

The first method, and from what I've gathered the most common, requires a pressure cooker. This is what I use in my kitchen and I normally set it to 15psi for a 7 minute cook time. But be sure to use a quick release or auto release for your pressure. It is best to cook all the vegetables separately and add them plus any cheeses/sauces to the risotto at the end.
