there are many ways you can break an egg all you have to do is put a fair enough of force on the eggshell and it will eventually crack. The most common way of intentionally cracking an egg is lightly hitting it on the edge of a counter or the side of a pan, and then breaking it in half.
Crack the egg in half, over a bowl, keeping the yolk in one half shell. Allow the egg white to fall into the bowl. pour the yolk from one shell to the other until all the white is out. Cut the chalazea off with the shell. (do not let the yolk break throughout this process.)
Use a separate bowl in case some shell gets into the egg and you have to remove it. Take the egg in one hand and sharply strike the edge of the bowl with the middle of the egg until the shell cracks.
