This is one of those recipes that a slow cooker comes in super handy - but it is not necessary by all means - but a crock pot, or a deep and large soup pot with lid will easily suffice.

Best Pot Roast Recipe:

Ingredients:

  • beef rump roast, about 4 pounds
  • 1 small onion, sliced
  • 2 tablespoons salad oil
  • 2 tablespoons butter or margarine
  • 1 clove garlic, crushed
  • 1 teaspoon dried thyme leaves
  • 1 bay leaf
  • 8 whole black peppercorns
  • 1 teaspoon salt
  • 1 can (10 1/2 ounces) beef broth, undiluted
  • 12 small white onions
  • 6 to 8 carrots, peeled & halved lengthwise
  • 1 teaspoon chopped parsley
  • 3 tablespoons flour
Directions:
  1. In a 5-quart Dutch oven or large heavy kettle over medium heat, brown the rump roast with sliced onions, turning, until browned on all sides using olive oil and a little butter.
  2. Add garlic, thyme, marjoram, bay leaf, black peppercorns and and salt; cook, stirring, for about 30 seconds.
  3. Add beef broth. Bring to a boil, then reduce heat to simmer; cover and cook for about 2 1/2 hours. Add onions, carrots, and parsley; reduce heat, cover, and simmer for 30 minutes or until vegetables and meat are tender.
  4. To make gravy: Transfer meat and vegetables from Dutch oven to warm serving platter. Keep warm, covered loosely with foil. Into 2-cup measure, strain liquid remaining in Dutch oven. If necessary, add water to measure 2 cups. Return the hot liquid to Dutch oven.
  5. Combine flour with 1/4 cup of cold water; stir until smooth. Stir flour mixture into liquid in Dutch oven and bring to a boil, stirring constantly. Reduce heat; simmer for another 3 minutes. Taste and add salt if desired. Serve with potatoes.

Serves 8.

To cook a bottom round roast, first trim off any excess fat and allow to come to room temperature. Rub the roast with a mixture of 1 tablespoon pepper and 4 tablespoons of salt. Preheat the oven to 450 degrees. Place some cut up celery and carrots on the bottom of a roasting pan and lay the roast on top if them. place it in the oven. After about 15 minutes, turn the temperature down to 300 degrees. Cook for 17 minutes per pound.

You can grill anything, but this cut would not give good results. It will come out tough and dry. A better approach would be the more traditional barbecue, where the meat is cooked slowly over a low fire for 3 to 4 hours, while keeping it moist with sauce.

Tender Juicy Grilled Pot Roast

Marinade:

In a medium mixing bowl, combine:
3 cloves garlic, finely minced
¼ cup red wine vinegar
1/3 cup sherry
¼ cup olive oil
1 tbsp. soy sauce
1 tsp. dry mustard
Black pepper

You will also need:
Meat thermometer
1 gallon zip lock freezer bag
2 tbsp. ketchup

Marinade procedure:

  • Pour into a gallon zip lock freezer bag.
  • Place the roast into the freezer bag into the marinade mixture.
  • Allow the roast to marinate for 24 hours or longer.

Grilling Procedure:
  • Preheat your grill to medium heat, or light your charcoal grill.
  • Gas grill will be hot in 5 minutes. Charcoal grill is hot when the coals are ashen on the outside and bright red on the inside.
  • Mix the ketchup into the marinade and shake the bag to mix the ketchup in.
  • Remove roast from the marinade, reserve the marinade, drain off the excess, and place the roast onto the grill 5 inches away from the coals or top of the flames.
  • Baste the roast every 15 minutes as it cooks and turn the roast over every 15 minutes to cook on all sides.
  • Grill between 30 and 50 minutes or until internal temperature reaches 160 degrees F.
  • Baste the roast again when it reaches the proper temperature and serve hot.
