I freeze cantalope all the time. It is a terrific summer snack. Eaten slightly frozen, it is cool and refreshing. I believe the same is true for pineapple. Some say that it is necessary to freeze in a sugar water solution though if you want to keep the fruit frozen more than a month.

Although you cannot can fresh cantaloupe, many people can cantaloupe relish that they make using their fresh cantaloupes. You can can Cantaloupe butter, relish, pickles, jam, and jelly, or freeze it in chunks. I have heard or people canning it in a medium syrup - boiling water bath for 30 minutes but I do not know if it is a safety approved method of preserving it.
