The only way to stop your companion from attacking is by telling him/her to wait. To do this you talk to them and then select wait here.

∙ 12y agoYou have bounty in that hold. Put your weapon away and they may attempt an arrest. If they don't attempt an arrest, you have to find a guard that will. Just make sure your weapon is put away.
