You really don't *need* to keep ANY cookies once you are done browsing. They basically do two things. One, they hold on to certain information, for example when you choose something like "Remember my email address". They can also save other information to make your experience more convenient the next time you visit a web site.
The other purpose is more important, especially for when you are logged in to something like Hotmail or your on-line banking. The cookie is saving information about your session so you can remain logged in to do your business. :) It's not saving confidential information, just session id information. That way, when you click from page to page, you remain logged in.
If you deleted all of the cookies now, you would not harm anything. But you would notice that for your favorite web sites, for example WikiAnswers, you would need to re-enter your screen name and password instead of it being remembered.

If the list of cookies is short enough, you can select the few to keep that represent log-in information that you would not have to re-enter. But many cookies have no value other than for online ads.

If it asks you for a password, then you have been logged-in in past and the information about your last used account is in the cookies. So close all the windows with youtube pages, delete the cookies for domain youtube.com (or all the cookies if you don't know how to delete just specific ones) and then go to YT and it will not require a password anymore.
