My husband makes a wonderful juicy salmon baked in the oven. First he lines a baking dish with tin foil and sprays it with cooking spray. Then places the salmon on the sprayed foil and lightly sprays the salmon. Then he sprinkles dill weed and a few choice spices, like Mrs Dash or Cajuns Choice-sprinkly lightly. Next he tops the salmon with lemon slices and squeezed juice from remaining lemon ends. Cover with foil and bake at 350 for about 45-60 minutes. Start checking at 45 minutes, so that the salmon doesn't over cook and keeps juices in! Dill and lemon are popular ingredients for baked salmon. They don't over take the salmon flavor, they enhance it! Enjoy!

if a whole salmon - obviously gutted then curl round in a large saucepan and simply bring to the boil and then turn off and let it cool down completely in the water. transfer it to your flat dish and dress with lemon and decorate with lettuce etc

To blacken a Salmon fillet you'll need a gas burning stove an iron skillet (Teflon will work to). Line the skillet with a little bit of olive oil and make sure the skillet is HOT before placing you fillet to cook. Butter your Salmon fillet then season to your choice. Lay your fillet on the HOT skillet and let cook until each side has a nice blackened finish and the middle is a light pinkish colour. Melting butter with lemon and garlic makes a nice dipping for the fillet, serve with a steamed vegetable mixture topped with thick marinara sauce. Perfect Dish!

There a a myriad of recipes, but here is what I do: Buy (or catch, I suppose) a salmon fillet with the skin still on. Use a kitchen towel to carefully blot the excess moisture from the fillet. Season the fillet liberally with salt, I like to use sea salt, but any will do really. In a small bowl mix the juice of 1/2 lime with 1/4 cup honey. Add a teaspoon of minced fresh cilantro. brush this mixture on the salmon fillet and reserve the remainder. set the salmon fillet on the counter, uncovered to air dry while you prepare the coals. Prepare a medium hot bed of coals in your grill. When the coals are white, place the salmon fillet skin side down on the grill. At this time you may also want to throw a handful of soaked hickory, apple, mesquite or alder chips on the coals to add smokey goodness to the finished salmon. Cover the grill and let cook for 5 minutes. Baste the fillet with the reserved lime/honey glaze and replace the cover. Cook for an additional 10 minutes. To remove from the grill, slip a spatula between the skin and flesh and lift the flesh away, leaving the slightly charred skin behind. Serve to your admiring friends and family.

Here is a recipe that I use, you will like for baked salmon. Salmon does not do well broiled. Take salmon fillets and put them in a baking dish that has been rubbed around the base with butter. Pre heat oven to 325. Place fillets in pan. Sprinkle with lemon pepper spice, some slices of butter, and a few slices of sliced lemons. Place pan in the oven, and keep an eye on it, it only takes a few minutes. When the fish flakes easily with a fork, it is ready.

I use a toaster oven, prefer baking.. I add spices to mayonnaise and spread over the top, bake 350 for 15 min. I use larger pieces than a serving size as I eat for lunch the left over portion. Spices are what ever you like, i use Asian spice mix sometimes or I will do pepper and garlic with lemon and butter (no mayo here)

You can wrap it in aluminum foil and put it on the grill, with whatever flavorings you like. You could also just cut it into fillets and grill it up that way.
