Pick a big bowl of wild grapes. Wash well and place them in food processor. Pulse on high until completely mashed. You can add a little water if too dry and a little granulated sugar if it is too sour..

Place this pulp into a cheese cloth and place the cheese cloth over a bowl.

Collect the juice that drips down. You can squeeze the cheese cloth bag to get all the juice out.

Cordials of all kinds are -super- easy to make!

You will need:

  • a bottle of either whiskey or vodka
  • a bottle, jar or other glass container to 'brew' your mix in (make sure the spout is big enough for your fruit or fruit pieces
  • a tasty fruit of your choice -- blackberries, raspberries, strawberries, peaches and other fruits with stong flavors work the best

1) Clean your container well and fill it with your fruit -- the more fruit you put in, the greater flavor your final product will have, so I like to loosely pack the bottle.

2) In another container, mix your cup of sugar with just enough sugar to disolve it. You can use more sugar than I do for a sweeter product -- experiment to find what you like best. Pour the liquified sugar mixture into your container over the fruit.

3) Now pour in your chosen liquor into your container, leaving just a little bit of room at the top. Cap your bottle/jar and give it a good shake to mix the contents.

4) Turn and/or shake the bottle every day for no less than a month. The alcohol will work its way into the fruit and disolve out the flavor (and usually the color too). After a month (or longer) you can enjoy your brew! If you see mold at all (which may happen at the top or in bubbles if you don't turn it) throw that bottle's worth away.

Tips & Tricks:

- After sitting you can decant the liquor into another container (pour it through a strainer and then cheescloth to remove bits) or keep the fruit in. Many liquors are quite beautiful with the fruit. The fruit can also b eaten -- very nice over ice cream (just remember it's alcoholic now too!)

- Try kinds of fruit or even mix them together. Remember that very mild fruits may leave a very faint flavor, or may be over powered by the original taste of your whiskey/vodka.

- Expensive starting liquor isn't necessary, but bargain-basement may have heavy flavors of its own. I usually buy low cost stuff but not the cheapest -- your work will improve anything, but if the initial liqior tastes like turpentine it will only improve so much.

- Many herbs can also be used this way or combines with your fruit. Try flavors you enjoy like mint or lemon rind. Beware that herbs have very strong flavors so it may not take much

- You can reuse just about any sealable glass container, so keep an eye out for neat bottles and jars -- some of the alcohol you buy normally probably comes in neat containers!

My mother makes cherry cordial when the cherries are ripe, then we all enjoy -amazing- shots as Christmas treats. Pretty bottles of cordial also make amazing gifts! Many cordials improve with time, so don't hurry to finish them off (or make enough to last!). Have fun! Slainte!

Homemade grapefruit juice is typically made with grapefruits, either standard or ruby red grapefruits, which are washed and cut into halves and then juiced with blood Oranges to take away some of the sharpness.
