"Yosh" (technically "yoshi", よし) doesn't really have a literal translation. It's more like something you say before doing something, like you're gearing yourself up to do it. For example you might say, "Yosh, ikimasu yo!" ("Okay, let's get going!")

よし (yoshi) is an expression of positive feeling, similar to "okay" in English. As with many Japanese words, し (shi) is passively expressed making it sound similar to "sh" even though it is technically a syllable with an 'i' attached. The first part uses the long 'o' sound. Putting it together, it would sound like "yosh" as one syllable.
