Right click on the song you want to change the album artwork of...
click, get info...
on the top, right hand side there is a tab that says artwork....
if there is one there is already there, click it first then click delete...
or you can add another one, just my clicking add...done!!

Start -> Folder Options -> View
Check: Show hidden files, folders, and drives
Ucheck: Hide protected operating system files
Now all the album art will be visible so you can simply delete and refresh the folder.
Note: Don't forget to check the "Hide protected operating system files" after you are done.
P.S. If this doesn't work, use the freeware Mp3tag.

Yes, I know it is a pain in the neck. But iTunes is not exactly a saint when it comes to you buying music. No, the above statement is false. You do not have to download songs from iTunes. You can add the album art on your own. First, make sure that the album names for your entire library are correct. There are three ways to do this: 1. Look up the album on Google, and when you find a decent sized picture of the art . 300x300 is the size to go for, but smaller works too (and of course larger images too). Head over to iTunes, and where the album art should be displayed when having a song selected, right-click in the box saying something along the lines with "Drag album-art here" (or something like that). Paste the picture, and you're done. The album cover will appear in cover-flow. Remember that all songs will have to be applied with the album art. This technique is possibly the most time consuming one, but you know for sure that you'll get the right album-art that might not be available anywhere unless you buy the song. 2. Register yourself on iTunes. If you don't want to add a credit-card, buy a iTunes pre-paid card for a small sum. Register your account with the pre-paid card instead. You can now download atleast one song. After that (if it works the same way for everyone), you can right-click the songs in your library, and "Get Album art" will come up as an option. iTunes will automatically update the album cover, if available. Easy and efficient, but it will cost you that one pre-paid card. I think there are card from $20 and up. Having an account will make iTunes Store much more fun, too, so it's not just for the album art. 3. There are program that you can download (head over to Download.com) and search for iTunes Album art, or something like that. It'll do the job. Why this isn't as secure as the previous options is because most of the album art will be added automatically, all at the same time, which gives you no control over if the album art is correct. Changing faulty album arts can be quite a pain. Probably the easiest, but maybe not the most secure way to update album art.
How do you change a cover flow picture?
Cover Flow in iTunes (and respectively, on the iPod and the iPhone) displays album art from tracks. By changing the album art, you change the cover flow picture. You can accomplish that by: a) Right clicking on one (or selecting multiple, then right clicking) song, then selecting "Get info". Click on the "Artwork" tab, and then proceed to modify or add new art. b) On the far bottom-left corner of the iTunes window, you can see four icons. The furthest to the right pops out an album art window. By clicking on the header of that window, you can switch between "Selected Item" and "Currently Playing" album art display. If you have the "Selected Item" display, you can change the album art of one or multiple selected songs by drag and dropping an image onto the album art area. c) Right click on one or more songs and select "Get Album Artwork". Please note that this option requires you to have an iTunes account. You can also get album artwork for all the items in your library by selecting Advanced > Get Album Artwork. Downloaded album artwork will automatically propagate to the whole album. Please note that a song can have more artworks applied. By using the option a), you can check if this is the case. Also note that the applied artwork does not transfer with the mp3 file, but is stored in the iTunes folder.
