Cook tomatoes for as long as you possibly can. The longer you cook them for the better they taste. The act of cooking tomatoes also increases the health benefits they have.

Tomatoes are a good source of lycopene, the phytochemical which makes them red but which also has significant antioxidant properties. Research has shown that this antioxidant power can be boosted even more through the of cooking the tomatoes.

You're probably tasting some of the flavors imparted by the can itself. You could try a couple of things. Sometimes simmering the tomatoes lessens the taste a bit. But a little sugar might work better.

How do you get rid of burnt taste in french onion soup?

There is no real way to remove a burnt taste. You could try diluting it with more water and then add more soup base but generally once the taste is in the soup it is very hard to remove it. The best thing to do is start again and watch it close to be sure it doesn't happen again.
