The easy way to do what you want to do is to make a file called Christmas songs and list the songs in that file. It will stay on your iPod, but you just don't listen to them. You could also go in iTunes and uncheck the songs in your library that are Christmas songs. Do a sync of your library to your IPod and the songs will stay in the library, but not be on the IPod. When you want them back go in to Itunes and check them, sync, and they will be back on your IPod. If you want only Christmas songs you would check all the songs that are not Christmas and sync. Either way the songs stay in your Itunes library, but are not on the IPod.
When the songs were erased from your Ipod, you can never get it back, maybe you have plugged in your iPod to other PC/laptop that has itunes. You should connect your iPod only to the PC where you have installed your own itunes.
delete the songs you want off your ipod off your itunes library. plug your ipod back in and it will update.

Most of the time this happens when you transfer your songs from one computer to another, you just need to register those songs to your new computer (you can register your songs on up to 5 computers).
Put the songs back onto the computer from the ipod.
Resetting the iPod will erase all of the songs, so remember to back it up!
It can be done this way: Connect your ipod to the computer and you will immediately get an alert come up on the computer which should read: "itunes has detected songs not in the library, do you want to transfer these songs to the itunes library?" (something along those lines....) to which you should click "YES"

You Can't But You can put the songs on your ipod onto itunes then put them delete them And then sync ipod with itunes. then you will get them back and you will get then new ones to. i hope that answers your question.
