The Mac does not have a DOS mode to turn off.
It does have a command line mode called 'Single User Mode' where UNIX commands can be executed. Get into SUM by holding Command S at startup.
To go back to the Mac OS X interface, type 'reboot' and press the Return key.
If you are having trouble with something you can also start up in 'SAFE' mode by holding down the S key during start up.
Another handy key on start up is the shift key. You will start up with minimal system mode.
And last, switch to a different hard drive to use as the start up drive by holding the option key at start up. Drives with bootable systems will be presented on screen. Tab to the one you want and press return.
