An ermine can defend itself by using:
1. it's instinct to kill
2. razor sharp teeth
3. sharp talens(claws)
Ermines will kill anything even if it means its life will be lost.
They will even attack:
bears
foxes
wolves
porqupines
The male and femal ermine live apart except during mating season. Males are very territorial and become aggressive when an intruder invades their territory. In a defense mode, they puff up and give threatening warnings like clucks, high pitched screams, and barks.
When the time comes to mate, the male ermine sprays its musk (pheromone), using it to attract females. Mating season is the only time they are found together. They usually mate in March. Females will have one partner while males often have many.
Ermine eats all the time, but they never get fat! This is because they are always on the go. The ermine may surplus kill when the opportunity arises, though excess prey is usually cached and eaten later to avoid obesity, as overweight ermines tend to be at a disadvantage when pursuing prey into their burrows.
Ermine survive because they are able to slide their bodies into small holes. They are also very aggressive and are able to keep some predators away.

What i think that nosebottled dolphin to defend itself is by biting their enemy and swim away as fast as they can.
