The male and femal ermine live apart except during mating season. Males are very territorial and become aggressive when an intruder invades their territory. In a defense mode, they puff up and give threatening warnings like clucks, high pitched screams, and barks.

When the time comes to mate, the male ermine sprays its musk (pheromone), using it to attract females. Mating season is the only time they are found together. They usually mate in March. Females will have one partner while males often have many.

The ermine may surplus kill when the opportunity arises, though excess prey is usually cached and eaten later to avoid obesity, as overweight ermines tend to be at a disadvantage when pursuing prey into their burrows.
