Yes, hypnosis works - because it is nothing more than an intensely focused form of interpersonal communication during which one person deliberately induces a naturally occurring state of mind in another. Most normal people enter hypnotic states regularly, for example, when "daydreaming", or performing routine tasks "on autopliot" whilst thinking about something else, or when totally absorbed in reading, watching TV, listening to music etc.. Being hypnotised simply means allowing oneself to be guided into a state of total relaxation and concentration by someone whose words and actions are deliberately focused on enabling one to attain such a mental state. Most people can be hypnotised if they want to be: there's nothing "magical" about it; all that's required is willingness to listen to instructions, suspend critical judgement, and be guided.
Much depends on context; the relationship between operator and subject; the aim/ purpose of the session; the personality and mind-set of subject etc.. Hypnotic capabilities vary considerably, but most (80%+) can attain some degree of hypnotic trance if they're willing, and trust the operator. Fewer (10-20%) can attain deep trance states: typically, those with high intelligence, high ability to concentrate, vivid imaginations, and high willingness to trust make the best subjects.
I did not think hypnosis would work for me. When, however, a friend (a graduate psychology researcher) asked me to try it to help with a study she was doing I agreed to "give it a go". Didn't think much would happen, but I was willing to listen to her, follow instructions etc... and very quickly was totally hypnotised! I was in a trance for two hours (which seemed like only about twenty minutes!), and apart from her voice remember little about it. During my trance I opened my eyes, stood and walked around, and completed a number of letter and shape sequencing tasks, as well as answering questions, but can not recall any of this specifically, and throughout saw nothing but the revolving spiral she'd used during trance induction.
Later she hypnotised me many times "for fun" - interesting experiences which I recall fully because she instructed me to remember. I also saw a hypnotherapist to check whether the experience was repeatable with another person - it was. Since then I have developed my own hypnosis skills, and have hypnotised many people in a variety of contexts, although never for public performance/ entertainment. Although generally probably harmless to most, I dislike the whole tacky "music hall" aspect of hypnosis stage shows, and there is potential to do real harm to a few unfortunate individuals who, although willing, may have underlying mental health problems which could be worsened by such experiences.
So, yes, hypnosis does work. I'm very good at it, but most people can be hypnotised if they want to be, although, in most cases, not as profoundly as me. It can be a useful therapeutic tool when used by competent and ethical practitioners, and it's fine for fun amongst friends where those involved are secure in themselves and confident there are no latent mental health issues lurking under the surface. I do not believe, however, that hypnosis should ever be used for public entertainment because certain vulnerable people may be exploited, and possibly, harmed in this way.

It only works if the person really wants the change they are aiming for. There is no kind of hypnosis that works against a persons will, and whilst they may think they want to make this change in their habits or the way they feel, there is sometimes a price to pay.
For example, using hypnosis to stop smoking can work but there may be part of that smoker that thinks "I'll probably not manage to quit" and if that feeling or thought is there it will undermine the positive intentions and the self hypnosis efforts will fail miserably. It is not that the hypnosis failed, it is that there was not a 100% commitment in the first place and without that commitment no hypnosis in the world will make someone change when they don't really want to.
