I lived in central CA and to drive to the Mexico border would take me 8 hours. It is 600 miles to San Diego and another 50-75 or so miles to the border. From central CA to Oregon is another 8 hours. I drove this in 2000 and went up I 5. I stayed the first night at Mt. Shasta and then went on the next day to Oregon, so it is about 800 or so miles. Watch out for the highway patrols in OR they are unmarked with radar and like to sit in the medians.

since the question does not ask about driving distance nor about driving time nor about police or overnight lodging etc but evidently only about the distance the answer to it should tell the distance & skip the other stuff

as interesting as it may all be to the answerer

741 miles is the shortest possible distance

but of course you could also make it as long & as far as you like too

The distance from Salem to San Diego is about 1,040 miles. Depending on where you're coming from/heading to exactly, it's about 1,050 miles to the Mexican border.
