The ingredients are pretty simple for basic bleu Cheese Dressing

Mayonnaise

Half and Half

Heavy Cream

Blue Cheese Crumbles

2c. mayo

1c. Half and Half

1/2c. Heavy Cream

1 1/2c. Bleu Cheese Crumbles

Mix Half and Half and 1/2c. bleu cheese in blender or food processor. Blend until smooth. Add in heavy cream and mayo, blending until just blended. Stir in the remaining bleu cheese.

Play with the ingredient amount if you choose.

Sheep or cows milk, which is treated with rennet, separated from the whey, salted and pressed into blocks or wheels. This cheese is then injected with blue mold spores (usually a local variety often cultivated from a starter cheese). This mold is allowed to grow inside the cheese as the cheese is aged and dried.
Some varieties include gorgonzola, roquefort, danish blue and stilton ... among others.

Blue cheese is called the french chesse known to belong to the Rochefort family. It needs certain temperature and humidity requirements and its is aged in some caves located in France.

[ADDED} Blue cheeses are by no means only French; nor are they called "The French Cheese" - there are umpteen French cheeses of all types. Local blue cheese varieties are also found in Britain, and presumably other countries; and not all need cave ageing as such but do need cool, slightly humid conditions.

Blue and bleu cheese is the same thing-bleu is BLUE in English. BLEU is id blue in French.......in blue or bleu cheese is just blue mold............
