When they are caught they are put straight on ice which slows down their metabolism and they go into a sleep like state. They are shipped in this condition and are sold in the "live fish" markets in Japan.

Tuna fish are processed by going through the fishing part. Then they get put into a factory that is about 60 degrees all the time because of the humidity of the area, the factory is a huge enclosed shed with station tables. The first table is the goriest table, they chop the heads of. then all the tuna go through a belt that put them into a box, then is transported through about 900 tables. Each table has about 7 people on it the skin the fish ready for packing. They have to finish about 10 tunas in about a minute.
