19 minutes is a good rule of thumb, How ever this time may need to be adjusted accordingly. And as always lower and slower tempatures during cooking, makes for a more tender and more juicy roast.

Depending on heat. It's done once the internal temperature of the roast is 190 - 200 degrees. Gotta break down the membranes in the meat or it will be tough. Fire should be around 275-300 degrees. About 25 minutes a pound is in the ballpark.
