I attended an Orthodox Jewish wedding last evening ... June 22, 2009. The ceremony was done in a very formal way. It included all of the essential elements, plus two brief speeches in addition, and lasted about 30 minutes. My feeling is that the average is somewhat shorter ... perhaps 20 minutes typically.

Theoretically it could be done in under five minutes. Normally it will take twenty or thirty minutes or so, unless there is some delay, such as waiting for someone to arrive.

The actual marriage ceremony takes between thirty minutes to an hour. The party afterwards takes the rest of the night.
