We live in Guatemala & all beef is sold the day or day after it is slaughtered. No aging here. Beef may be aged in your refrigerator (if it is really cold) for about five days if laid on a flat platter on wax paper & loosely covered with wax paper. I know people that leave it longer but I am comfortable with the 5 days.
A pork tenderloin should be able to be stored in the refrigerator from 3 to 5 days.
