It depends on the type of cheese and if it is cut or not. An uncut wheel of hard cheese can sit at room temperature for months. Once cut, it will quickly dehydrate and form cracks. A semi-soft cheese, or one with higher water content will dry out in a few hours. Some soft cheeses, such as a brie may melt like butter in 2 hours. Ask your cheese monger when you buy the cheese how to store it. A specialized storage container like the Cheese Saver might help.

Months, if the pack is unopened. After it has been opened it will develop mold over a few weeks. This mold can usually be cut off and the rest eaten.
