Freshly baked bread will go moldy much quicker and should be kept in a cool place. Many breads bought in the store can stay on the counter for a week or more. However, if you think of it, what chemicals are in that bread to make it last so long in a warm area? I would rather have good bread and keep it in the fridge.

If you put bread in the freezer, you can keep it for a long time and just defrost it and it wont be nasty or soggy. However, if you just keep bread out, dont eat it when you can see and smell mold and especially if the bread is turning colors.

It takes about a week and a half for wheat bread in the fridge to go stail and wheat on the counter or room temp. about ten days.
The time is takes for bread to begin to stale depends on a variety of factors and circumstances. Open bread with stale within a say. Closed bread will mold before it will stale. Heat and cold also make a difference, where hot bread may mold/stale faster and cold/frozen bread may stay good for a long time.
