Only a day, maybe two at the most. Cooked refrigerated potatoes develop undesirable changes in flavor. The flavor as well as their consistency changes due to the starch i…n the potato. However, they are very good to make into potato cakes. Mash and add egg and flour and fry the as you would pancakes. Can add salt, pepper and whatever other herbs you prefer. You can also mash them into a mashed potato using chicken broth or bouillon cube dissolved in water, ( see directions of bullion) and freeze.
According to the Clemson University Extension article "Safe Handling of Seafood" cooked shrimp stays good in the refrigerator for 3-4 days.
