From what I've researched, it seems that you should count on 2 servings per pound, so for 30 people, you will need a 15 pound ham. If you want leftovers though, you should go bigger (that is for bone-in ham).

Well, this depends on how much they eat. My family usually makes a 20lb turkey, and this year we had about 10 people... We made no ham =( but we had plenty left....
