When deciding how much meat to include in a meal, consider other side dishes. For the average serving, you'll need 4oz for a sandwich, 6 oz for a plate. For 300 people, that is 75 pounds cooked. Because of a 40-50% shrinkage depending on cooking time (and fat trimmed), you would need up to half the weight again--which adds up to about 112 lbs.

A general rule of thumb for large gatherings is 1/4 pound of meat (main dish) per anticipated guest. The decision to make here is how much of each meat, when the overall total is going to be 75 pounds.

It depends on whether you are going to serve Sandwiches, or a plate with side dishes. For sandwiches, you'll need about 4 ounces of brisket per sandwich. You should plan on 4 - 6 ounces of brisket for a plate. With possible shrinkage during cooking, you should start out with about 112 pounds of brisket for 300 people.

Brisket is a cut of beef. To feed 300 allow about 8oz uncooked weight per person.

Brisket benefits long slow cooking and looses weight during the cooking process.

For 300 people allow 150 lbs, this should produce about 6oz cooked beef per person.
